Regardless, you're right; you could still play the same story missions that you've completed or skip on a co-op session, so long as you're not the host of that co-op session and that host hasn't also completed or skip those missions. You can usually go back to the location and re-fight the boss, though. It's not redoing the mission, per se, but if you're farming for Legendary Weapons or something then it's certainly an option to just go for a fight.
